Legend has it that this ancient grain, referred to as “longevity rice,” was eaten exclusively by the emperors of China to increase health and ensure a long life. This medium-size heirloom rice is treasured for its delicious roasted nutty taste, soft texture, nutritional content and beautiful deep purple color. Lotus Foods has been purchasing our Forbidden Rice® from small family farms in the Black Dragon River region of China's sub-arctic Northeast provinces for over 20 years. This whole grain is a natural source of magnesium, protein and fiber.
Combine 1 ¾ cups of water, 1 cup rice and a pinch of salt. Bring to a boil over high heat. Cover, reduce heat and simmer for 30 minutes. Remove from heat. Let stand covered for a few minutes. Fluff and serve. A rice cooker may be used with the same water-to-rice ratio.
